I've gotten pretty good with modes 3 4 and 5, but I'd like to see how modes 0 - 2 work. Any good tutorials on them?

The PERN Project has decent tutorials on tiled modes. If you've ever used anything like conio.h, the basic concepts behind the GBA's tiled modes will probably come easily to you.
